Our mission is to help preserve heritage breeds of livestock while simultaneously providing fabulous, all-natural meats that are humanely raised in a pasture based system without hormones, antibiotics or animal by-products.

Our Italian sausage is made using an old family recipe that was served in our family owned Italian restaurant in Buffalo, NY. In the 70’s my parents moved the family to Florida, and mom and us kids made Italian sausage to earn extra income. Mom would order 500 lbs of pork butts each month from the local butcher and we’d grind, stuff, link for a whole day. I was the helped grind and link and my brother would weigh and bag. Then my brother and I packed up ice chests mounted on the front of our bicycles and would literally ‘pedal sausage’ all over town making our deliveries. It’s been 10 years since we stopped making it at home, but people in our little Florida town still ask for it. Now it’s USDA inspected and even better because it’s made out of pastured pork!
